  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound mushrooms (e.g., cremini or button), sliced
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • 1/2 cup sour cream
  • 1 tablespoon flour
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat the butter and olive oil in a large pot over medium heat. Sauté the chopped onion and garlic for about 3 minutes until softened and fragrant.
  2. Add the sliced mushrooms and paprika, stirring occasionally. Cook for 5–7 minutes until the mushrooms release their liquid and begin to brown.
  3. Sprinkle the flour over the mushrooms and stir to coat, thickening the soup.

  5. Stir in the sour cream and season with salt and pepper to taste.
