  • 1 bag Success® White or Brown Rice
  • Non-stick cooking spray
  • 1 pound lean ground beef
  • 1 packet (1 1/4 ounces) taco seasoning mix
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 2 cups shredded lettuce
  • 1 large tomato, chopped
  • Salsa (optional)

Instructions

  1. Cook the Rice: Prepare the rice according to package instructions.
  2. Cook the Beef: Coat a large non-stick skillet with non-stick cooking spray. Cook the ground beef over medium-high heat until browned, draining any excess fat.
  3. Combine Ingredients: Stir in the taco seasoning, water, and cooked rice. Bring the mixture to a boil, then reduce heat and simmer for 5 minutes.
  4. Add Cheese: Sprinkle shredded cheddar cheese over the mixture and let it melt.
