  • For the Shrimp:
    • 1 lb (450g) large shrimp, peeled and deveined
    • 2 tbsp Cajun seasoning
    • 1 tbsp olive oil
  • For the Pasta:
    • 12 oz (340g) linguine or fettuccine pasta
    • Salt for boiling water
  • For the Sauce:
    • 2 tbsp olive oil or unsalted butter
    • 3 garlic cloves, minced
    • 1 cup heavy cream
    • 1/2 cup grated Parmesan cheese
    • 1 tbsp tomato paste
    • 1/4 cup dry white wine (optional)
    • 1 tsp Cajun seasoning (adjust to taste)
    • 1/4 tsp crushed red pepper flakes (optional)
    • Salt and black pepper to taste
  • For Garnish:
    • Fresh parsley or basil, chopped
    • Additional grated Parmesan cheese

Instructions

  1. Prepare the Shrimp:
    • Pat the shrimp dry with paper towels. Toss them with Cajun seasoning to coat evenly.
    • Heat 1 tbsp olive oil in a large skillet over medium heat. Add the shrimp and cook for 1-2 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  2. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  3. Make the Sauce:
    • In the same skillet used for the shrimp, heat 2 tbsp olive oil or butter over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
    • Stir in the tomato paste and cook for another minute.
    • Add the white wine (if using) and simmer for 1-2 minutes to reduce slightly.
    • Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese, Cajun seasoning, and crushed red pepper flakes (if desired). Adjust seasoning with salt and black pepper.
    • If the sauce is too thick, thin it out with the reserved pasta water.
  4. Combine and Serve:
    • Add the cooked pasta to the skillet and toss to coat in the sauce. Return the shrimp to the skillet and stir gently to combine.
    • Serve hot, garnished with fresh parsley or basil and additional grated Parmesan cheese.
